Berry Parfaits with Homemade Granola

Make your own homemade cereal rich in proteins, dietary fibre, vitamins and minerals. By making your own cereal, you avoid a lot of sugar, while at the same time you can choose ingredients adapted to your own taste. You can fill the mixture with ingredients that provide long-lasting energy and stable blood sugar, such as oatmeal, nuts, seeds and dried berries. Choose organic ingredients, and avoid ingredients exposed to chemicals. We recommend trying this recipe for homemade granola. Meal prep on Sunday and have breakfast ready for the rest of the family all week.

 

Recipe: (500 g)

250 g easy-cooked oatmeal, or large oatmeal

5-10 g dried blueberries

50 g sunflower seeds

50 g pumpkin seeds

50 g sesame seeds

50 g flax seeds

1 tsp salt

2 tbsp brown sugar

150 g coarsely chopped almonds or nuts

1 dl apple juice or other fruit juice

2 tbsp neutral oil

100 g honey

 

      Instruction

  1. Mix all the dry ingredients in a large bowl.
  2. Mix the juice, oil and honey in a small saucepan and heat gently until the honey melts.
  3. Pour the two mixtures together and mix well. Let it stand for a while to absorb all the liquid.
  4. Pour the mix onto a baking tray and spread it out in an even layer. If you are making more than one portion, you may need to use several trays.
  5. Bake in the middle of the oven at 140 °C for about 1 hour. Turn the mixture every 15 minutes to ensure even cooking. Cool and store the granola in airtight jars.

    For a healthy breakfast or dessert, you can use the granola to make a berry parfait by layering yoghurt, fresh berries and granola in a glass.
