Homemade Ice Cream Sandwiches

These homemade ice cream sandwiches are a real treat, creamy berry ice cream layered between thin, soft chocolate chip cookies.


Blueberry ice cream recipe 

     Ingredients

  • 2-3 tsp. Blueberry powder
  • 1 1/2 cups white sugar
  • 2 tablespoons water
  • 3 cups whole milk
  • 1 cup heavy cream

 

    Instructions

  • Pour the blueberry powder, sugar, and water into a pan and heat over medium for 5 minutes. Continue to cook until the mixture thickens to the consistency of a sauce ( 5-10 minutes). Allow it to cool for 15 minutes.
  • Add milk and cream to a bowl, then stir in the cooled blueberry sauce. Refrigerate min. 1 hour to cool completely. While cooling, it is normal for the mixture to separate.
  • Process the mixture into an ice cream churn according to the manufacturer's instructions.
  • When finished, pour the ice cream into a freezer-safe container and freeze until solid, around 8 hours.

You can easily substitute blueberry powder with other berry powders for other flavours and colours.

  Chocolate chip cookie recipe

      Ingredients

  • 280g all-purpose flour (spooned and levelled) 
  • 1 and 1/2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  •  170g unsalted butter ( softened to room temperature)
  • 150g packed light or dark brown sugar
  • 100g granulated sugar
  • 1 large egg + 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 225g mini semi-sweet chocolate chips

   Instructions

This recipe yields 24 cookies, which means 12 ice cream sandwiches.

 

  1. Preheat the oven to 177°C. Line 3 large baking sheets with parchment paper.
  2. Wish together dry ingredients: flour, cornstarch, baking soda and salt in a bowl. 
  3. Add butter, brown sugar, and granulated sugar to a large bowl. Use a mixer with a paddle attachment on medium- high speed until creamy, about 3 minutes. Then add egg, egg yolk and vanilla extract, and beat for a few more minutes until combined. Beat them on low speed for a few minutes, then add the chocolate chips until combined. The dough will become soft and sticky.
  4. It can be useful to use a medium-sized cookie scoop to form dough into balls. 
  5. Bake the cookies for 12-13 minutes until lightly browned on the sides. The centres will look soft.
  6. Allow the cookies to cool on baking sheets for 10-14 minutes before assembling your ice cream sandwiches. 

 

After the cookies are cooled, you can assemble the sandwiches.  Flip a cookie over and add a scoop of ice cream. Spread the ice cream to the edges, add a cookie on top, and press it all together.  If you prefer more flavour, you can roll the sides in chocolate chips, berry powder, or nuts. 

If you have leftovers, you can wrap the assembled sandwich in plastic wrap or parchment paper and place it in the freezer.
