Christmas Muffins
Try these big, delicious and juicy muffins, perfect for the Christmas season, with only natural food colouring and sprinkles.
INGREDIENTS
125g butter- room temperature
100 g sugar
100 g brown sugar
2 eggs
1.25 dl buttermilk ( H melk)
300 g plain flour
1 tsp baking powder
0.5 tsp baking soda
1-2 tbs lingonberry powder
1 tbsp cinnamon
2 tbsp cardamom
Pinch of salt
DIRECTIONS

Preheat the oven to 200°C.

Mix butter and sugar in the kitchen machine until white. Add the eggs and buttermilk, stirring well, then add all the dry ingredients. Add the berry powder at the end, mix in gently using a spatula.

Fill the muffin cups to 3/4 full and sprinkle with sugar. Cook for 15-20 minutes and let them cool on a rack.

For decoration, mix powdered sugar with water to make an icing, or make buttercream or cream cheese frosting. On top, add some lingonberry sprinkles.
