Spice Cake with Berry Frosting
We recommend trying this extra-juicy and spicy cake. The Kefir makes this cake extra juicy. By adding wild berry mix powder to the frosting, the cake gets a beautiful, natural pink colour and a delicious berry flavour.
Ingredients
3.8 dl flour
2.5 dl sugar
4 tsp cinnamon
1.5 tsp cardamom
1 tsp baking soda
2.5 dl kefir
100g butter
2 tbsp butter for the pan
Frosting
60 grams butter, room temperature
250 grams powdered sugar
130 grams of cream cheese
2-3 tsp. berry powder
1⁄4 lemon
Instructions
Preheat the oven to 200 degrees with conventional top and bottom heat.
Start by melting and cooling the butter.
Pour the sugar into a bowl and add the melted butter.
Whisk the eggs together and add them to the kefir.
Then stir the kefir mixture together with the melted butter and sugar.
Mix the spices (cinnamon, vanilla sugar, cloves, cardamom and ginger) in a small bowl, and measure out the wheat flour mixed with baking soda. Then sift the spices and wheat flour into the kefir mixture, while folding the dry ingredients in with a spatula as you go.
Grease a round springform pan with butter. Then pour in the cake batter and bake the cake in the second lowest position of the oven for about 25-30 minutes. Prick the cake with a toothpick, chopstick or similar towards the end of the baking time; if no batter sticks to the stick, the cake is done. Cool the cake in the pan.
Frosting
Whisk the butter and icing sugar until the butter is smooth. Add in the cold cream cheese and the juice of half a lemon. Carefully whisk in the berry mix powder. Choose the berry flavour you prefer. Remember that the berry powder you choose will affect both the colour and the flavour of the frosting. We can offer a wide selection of berry powders. After you have added the berry powder, continue whisking until you have an airy and shiny glaze. After the cake has cooled, you can frost it. You can top the spice cake with chopped nuts if you want. If there are any leftovers, you can easily freeze the rest of the cake.
