Energy Bites With Dried Berries
These Energy bites are like homemade candy, but a bit healthier and quick to make. They don't need to be cooked or baked—just chilled.

Ingredients

( 20 Energy bites)

10 dates
1 tbsp coconut oil
2 tbsp rolled oats
2–3 tbsp dried berries (blueberries or lingonberries)
1 tbsp cocoa powder
1 tbsp shredded coconut
1 dl peanut butter
2 tbsp honey or maple syrup
1 tsp vanilla extract (or vanilla sugar/paste)
 Method

  1. Add the dates and coconut oil to a food processor and blend until you have a sticky mixture.
  2.  Transfer the date mixture into a bowl and mix in the rolled oats, cocoa powder, shredded coconut, dried berries and a pinch of salt.
  3. Add the peanut butter, honey or maple syrup, and vanilla extract. Mix well and chill.
  4. Let the mixture cool in the refrigerator for about 30 minutes to make it easier to work with.
  5. After the mixture has cooled slightly, use your hands to roll it into small balls.  After rolling the balls, you can coat them in berry powder or shredded coconut. We offer a wide selection of berry powder. The Energy bites are ready to be served. Enjoy
