Sea Buckthorn-Pumpkin Smoothie
Sadly, most of these discarded pumpkins end up in landfills, where they decompose and release methane, a harmful greenhouse gas. Pumpkin flesh and seeds are entirely edible and can easily be used for smoothies. Best of all, pumpkin is exceptionally rich in vitamin A, providing over 200% of your recommended daily intake in a single cup. The bright orange colour comes from the antioxidant, beta-carotene. Beta- carotene supports vision, immune function, and youthful skin by boosting collagen synthesis, increasing cellular turnover, and fighting oxidative stress. Pumpkin also contains potassium,, which helps regulate blood pressure, along with antioxidants and vitamins C and E. What is more, pumpkin also contains fibre, which supports digestion and helps you feel full longer. By adding sea buckthorn powder to the smoothie, which is rich in vitamins C, E, and A, rare omega fatty acids, and powerful antioxidants, your immune system gets a real boost this fall.
